Frankly, I’m not really the type of girl who want anything elegant for Romantic days celebration. Let’s just make breakfast time and go on a great experience. To where? I’m uncertain, we’ll figure it out on the way.

Lemon Blueberry Quinoa Pancakes

2 teaspoons baking powder
1/3 cup simple nonfat greek yogurt
2 tablespoons of milk of your choice (skim, soy, almond, coconut)
3-4 tablespoon new lemon juice, depending on your lemon preference
zest of 1 1 lemon
2/3 cup clean blueberries
In a moderate bowl, whisk collectively quinoa, flour, baking powder, and salt. In another moderate bowl, whisk together egg whites, yogurt, milk, and brown sugar until clean. Add egg mixture to flour mix and whisk to mix.
Insert vanilla and lemon juice and lemon zest; whisk once again. Next gently collapse in blueberries.
Lightly coat a large non-stick skillet or griddle with butter or cooking spray and heat over medium. Drop batter by 1/4 glass onto skillet. Make until bubbles appear on top, about 2 mins. Flip cakes and prepare until golden brown on underside, 2 a few minutes. Clean skillet clean and repeat with more melted butter and staying batter.
Makes about 9 pancakes, 3 pancakes each. Top with fruits preserves, peanut butter, or maple syrup.
