First I’d like to tell you about the first time I fell deeply in love with pumpkin. I had been 9 years old and my mom and I baked a pie from scuff. The ease and comfort pumpkin pie brings me is certainly unparalleled.
I’m also a huge fan of oatmeal that i really didn’t begin eating until I had been in college. Now I eat oatmeal pancakes, bowls of oatmeal, and oatmeal in muffins! I love how healthy it is and am continuously trying to find new methods to add it to my quality recipes.
Now I know some of you’re requesting an oatmeal breakfast time recipe therefore i place two of my favorite things jointly for a very delicious fall breakfast. Baked Pumpkin Pie Oatmeal!
Pumpkin pie spices in a lightly sweetened oatmeal breakfast time bake. Uncertain when you can have a breakfast much better than this. I’m in like!
Oh and I must not forget to inform you on the subject of those bananas on top. I tossed chopped up bananas in a bit of brownish sugar and vanilla bean. You guyssssss. It’s amazing!
The bananas caramelize when bake and put under the broiler for a couple minutes by the end of baking. They’re somewhat crispy and fantastic, and just add a little bit of sweetness towards the oatmeal.
This recipe is easy to throw together, too! Simply whisk up damp and dry elements, combine together, after that bake for a little over thirty minutes. Cover and refrigerate for breakfast through the entire week, or you can even freeze and reheat for later! I love trimming mine into squares and experiencing them as a pre-workout morning hours snack! It’s also fantastic drizzled with just a little extra maple syrup.

Ingredients
1/2 teaspoon aluminium free baking powder
1/4 teaspoon salt
2 teaspoons vanilla
1 3/4 cup unsweetened vanilla almond milk (regular, soy or coconut milk also functions)
2 medium ripe bananas, sliced
2 teaspoons dark brown sugar
Instructions
Preheat oven to 375 degrees F. Apply 9×13 glass cooking pan with non-stick cooking spray.
Add bananas, brown sugar, vanilla, and vanilla coffee beans to a medium bowl. Provide it a few stirs so that brownish sugar coats all the bananas; reserve.
In a big bowl whisk together oats, baking powder, salt, cinnamon, cloves, and nutmeg.
In a separate large dish, combine pumpkin, egg whites, maple syrup, and vanilla; combine until clean and creamy. Whisk in almond dairy until well mixed. Add pumpkin mix to the dry mixture – blend well. Pour into ready pan and consistently top with dark brown sugars vanilla bean banana slices.
Bake for 35 moments or until top is golden dark brown and oatmeal is defined. Sprinkle a little more brown sugar on top of bananas; start broiler and broil for a couple minutes (view cautiously!). Scoop into bowls and serve immediately with extra almond dairy or cinnamon, if preferred. Makes 6 servings.

I have a recipe for any baked banana, oats, and Nutella dish I made about a yr back. This reminds me of it b/c of the sliced bananas and exactly how they get yourself a little caramelized. Wow, I wager they are simply so scrumptious!
One more issue. Is the vanilla bean required? Could extra vanilla extract be used rather?
So, I produced this dish for the 2nd time this week, and it came out so superior to the 1st time I made it. As I talked about in an earlier post, I accidentally left out the almond milk the 1st time. So this time I ensured to include it, and the oatmeal arrived really moist. Another thing I did, was add bananas in to the damp ingredients, as well as the caramelized bananas on top. This really added to the recipe.
