Chewy Carrot Cake Oatmeal Cookies (made with coconut oil + dairy free of charge!)

Last night I had developed a wonderful, healthy dinner including a turkey patty, brussels sprouts and a nice salad. I put to save area for a couple of these freaking awessome chewy, oatmeal carrot wedding cake cookies – one of my brand-new favorites.
A few readers have emailed me requesting a recipe for a healthy carrot wedding cake. I’m sure I’ll reach that eventually, however in the meantime I would recommend whipping up a batch of the small bites. They’re bursting with oatmeal, pecans, coconut and raisins then topped having a light cinnamon glaze. Jointly they combine in a cookie that tastes as being a slice of carrot cake. And dare I state that you could even enjoy them for breakfast?!
Yep, that’s right these cookies are created with whole wheat grains and oatmeal as the foundation. They’re also lower in fat, butter-free, dairy-free, and pack a pretty great dietary punch. I suspect you could even make them vegan by subbing in half of a banana or using a flax egg for the egg. Go crazy!
These cookies get crisp within the bottoms and outside but are deliciously soft and chewy in the middle. Chewy Carrot Cake Oatmeal Cookies (made out of coconut oil!)
Ingredients
3/4 cup white whole wheat grains or whole wheat grains pastry flour
1 teaspoon baking soda
1 egg
1/4 cup chopped pecans
dash of cinnamon
Instructions
Preheat oven to 350 levels F. Collection a baking sheet with parchment paper.
In a moderate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. In another large bowl blend together coconut oil, brown sugar, egg and vanilla until well mixed; next fold in shredded carrots. Add flour combination and mix using a solid wood spoon until just combined. Collapse in oats, coconut flakes, pecans, and raisins.
Use a little cookie scoop and drop by tablespoonful on ready baking sheet. Gently flatten with your hand. Bake for 9-11 minutes or until golden brown round the sides. Cool cookies for a few minutes around the baking sheet before moving to a wire rack to complete cooling.
To help make the glaze: Combine powdered glucose, almond dairy and cinnamon inside a bowl. Drizzle a tiny bit over cookies, then let dried out. Makes about 18 cookies.
Feel free to omit the raisins, pecans or coconut if you don’t prefer them. You can also replacement any nut or dried fruit.
TO CREATE VEGAN: Replace egg with half a banana or a flax egg.
TO CREATE GLUTEN FREE: I would recommend an all purpose flour for the whole wheat or trying 1/2 cup of almond flour.
You can even use 1/4 cup of butter rather than coconut oil in the event that you aren’t dairy products free and prefer to bake with butter.
Feel absolve to sub brown sugar with coconut sugars or with maple syrup. Remember that if you use maple syrup your cookies could be more cake-like.
If you want cream cheese (and aren’t DF), try adding a heaping tablespoon of softened cream cheese towards the glaze before you decide to combine it up; it makes the glaze super creamy and delicious!
